Vegan Double Chocolate Protein Bars

I am constantly on the hunt for good protein bars. When I began tracking my macronutrients and eating an amount of protein to build muscle and improve my recovery time from weight training and climbing, I also added protein powders and began eating more of them!

 I have struggled to find a protein bar whose ingredients I agree with and with the macronutrients that fit my needs. I absolutely love Lara bars, and I still eat them on occasion when I am just in need of a general snack, but as a I am mostly vegan, I do not have any trouble getting in enough fats or carbohydrates and when I reach for a bar, I want something high in protein for two reasons.


The first reason is that when I eat a bar, it is usually after a weight training session, intense bike ride/run/hike or in the middle of climbing. Ideally, as a woman, I would consume 20-30grams of protein within and hour of one of these workouts to help repair the muscle I just broke down. The second reason is that I really don’t want to waste that many carbs/fats on a bar- I would rather eat fruit, a smoothie, rice, oatmeal, coconut oil, nuts and seeds, etc. because it is a more filling snack.  8g of fat, 5g of protein, and 30grams of carbohydrates for a bar is just not going to cut it. I absolutely love the taste of Quest bars and Cliff builder bars, but I do not love the fake sugars, etc. In a quest bar, nor do I love the sugar content and higher calories of builder bars, unless I am supplementing a meal.

I have experimented with protein bar recipe, after protein bar recipe to no avail. Finally guys, I have found it! A vegan protein bar that I can stand behind 100%. These bars look like brownies and taste like peanut butter fudge bars. I’ll take that!



1 cup protein power
1/3 cup peanut butter
1 Tbsp. coconut oil
½ cup cocoa powder
1/3 cup rice puffs
mini chocolate chips (I just sprinkled these on top, but next time, I will be adding them into the bars)
¼ tsp. salt
¼  cup coconut sugar
1/3 cup chia seeds
water to texture
