Wonder Woman Bullet Coffee

Good morning fit foodies! Happy Monday! 
I am feeling good today, I have already spent a couple of hours with my hands in the dirt, digging and transplanting flowers and my husband went on a run with me this morning. 

You know why else I  am in a good mood?  I’m drinking- are you ready? … mushroom, collagen, butter coffee this morning. I have to admit, I was scared that it was going to taste bad. The collagen powder is intimidating and I felt like the scoop was huge in relation to the amount of coffee I had in my cup. But it’s awesome, smooth, delicious and slightly sweet. I think this is going to be a regular thing!

I followed the recipe on vital proteins website, using our mushroom coffee instead of regular coffee and a little less coconut oil.


I feel like I should call this "super woman bullet coffee" or something. I have been told several times that I am terrible at naming my recipes. For lack of a clever name, I just call things what they are: "vegan balls," "lentil loaf," "mushroom coffee...."  I will get better some day, I swear!  Wonder Woman coffee, let's go with that. I feel like her after drinking this, that's for dang sure. 

For two servings:

3 cups almost boiling water
2 servings mushroom coffee powder (You could also use regular coffee with reishi powder.
2 Tbsp. grass-fed butter
1 tsp. coconut oil
1 tsp. honey
1 scoops collagen


Add all ingredients to a blender and froth away. Pour into two cups and go get em’
